The ingredients needed to make Mopu Tofu:
  1. Prepare A. Main ingredients
  2. Take 600 g firm tofu - cubed
  3. Get 200 g minced meat
  4. Make ready B. Saute
  5. Prepare 3 tbsp cooking oil
  6. Take 1 tsp minced ginger
  7. Get 1 tbsp minced garlic
  8. Take 2 tbsp minced brown onion
  9. Get C. Seasoning
  10. Make ready 1 tbsp fermented black beans
  11. Prepare make into paste
  12. Get 1 tbsp chilli powder
  13. Get 1 tsp chili flakes
  14. Make ready 1 tsp Sichuan seasoning
  15. Prepare 1 tsp chicken seasoning powder
  16. Prepare 1 tsp sugar - or to taste
  17. Take To taste - salt
  18. Take D. Thickening Sauce
  19. Get 1/2-1 C water
  20. Get 1-2 tsp corn starch + 2 tbsp water
  21. Make ready E. Garnishing
  22. Make ready Sesame oil
  23. Prepare 1 big red chili - finely chopped
  24. Make ready 1 stalk scallion/spring onion - thinly sliced
Instructions to make Mopu Tofu:
  1. A. - Cube tofu and cook in a simmering water for few minutes. Add some salt. Gently remove from the pot and drain. Keep aside. Place minced meat in a pot with enough water covering the meat. Over medium heat, cook until meat is done. Remove and drain.
  2. Cooking the dish - Sauté B until aromatic. Add minced meat. Stir to combine for a minute. Season with C. Keep stirring, adjust taste accordingly. Cook over medium heat. Add D (thickening sauce). Stir until the sauce thickened. Start with only 1/2 C of water. Add cornstarch mixture. As for cornstarch, start with a teaspoon + 2 tbsp of water. Stir well. Check consistency. Add another half of water and another tsp of cornstarch for preferred consistency.
  3. Carefully slide tofu in and gently coat the tofu with meat sauce. Simmer over medium low heat for a minute. Drizzle some sesame oil on the dish and add finely chopped chili and sliced scallion/spring onion. Dish up.
