- Prepare fish by gutting, taking out gills and cutting fins&tails (or ask fish monger to do them). Clean inside and outside the fish thoroughly.
- Score two sides of fish.
- Brush olive oil inside throughout the fish and brush Sun flower oil (or other high heat oil) outside the fish. Sprinkle sea salt and pepper on both sides of fish
- Stuff Rosemary, thymes, ginger, garlic and lemon in the fish. Move both prepared fish to the tray.
- Put the tray in the top shelf of the oven (no cover) for 20 minutes. Check the fish at 15-18 minutes. Cooking time depends on size of your fish. When fish’s cooked take them out of the oven.
- Squeeze lemon on your fish (optional).
