- Get 1/2 cup vinegar
- Get 1/2 cup water

Place yogurt, mint, garlic, lemon juice, cumin, and cayenne in a small bowl and stir to combine. Season with salt and pepper to taste.

- Wash & peel potatoes. Cut in to desired shape, I cut in thin batons. Peel & thinly sliced onion.
- Put vegetables in bowl with gram flour, baking soda,salt,cumin seeds & red chilli powder. Mix with water as required to thicker batter.
- Heat up oil and fried pakoras. Golden brown and let it out then from oil on absorbing paper.
- For Mint Yoghurt : crushed mint & green chilli to make paste. Add in yoghurt.
- In yoghurt add ginger garlic paste and salt. Mix well. Mint yoghurt is ready.
- For Green vinegar chutney: Crush green fresh coriander leaves with green chilli, salt and clove of garlic make thick paste.
- Now put this paste in serving bowl and mix with white vinegar & water.
- Pakoras are ready for serve. Serve then with both tasty mint yoghurt & Green vinegar chutney.
Mix all the ingredients together in a bowl and serve as a dipping sauce. Mix the yogurt, coconut and mint for the dip, then season with salt. Repeat, using up the rest of the batter. When all the pakoras are cooked, put them on a platter, sprinkle with a little salt and reserved mint leaves, if you like, and serve with the dip and mango chutney. Place the vegetables in a food processor or blender with the yoghurt and blitz a few times.
