If using a gas grill, place all of the wood chips or chunks in the smoker box or in a smoker pouch and run the grill on high until you see smoke, then reduce the heat to medium.
Instructions to make Bourbon Street Bacon:
- Dip bacon one piece at a time into bourbon. Let sit on counter for 5 min.
- Pre heat oven 350. line a cookie sheet with parchment.
- mix all dry ingredients into brown sugar and mix.
- remove bacon from bourbon and lightly part them dry with a paper towel. Dip into brown sugar mixture one piece at a time carefully coating each piece.
- lay strips on the parchment then cover with another parchment paper and another cookie sheet
- place in oven for 25 to 35 minutes checking often.
If using a charcoal grill, place a large drip pan in the center, preheat the grill to medium, then toss all of the wood chips or chunks on the coals. Please do not use my images without prior permission. Combine any leftover bourbon, syrup, and brown sugar to baste the bacon with as it cooks.
