- preheat oven to 450°
- roast should be at room temperature. rinse and dry roast.
- make slits on top of roast, insert garlic slivers.
- mix herbs (1 1/2 t salt, 1/2 t pepper, thyme, oregano, savory) and 3 tablespoons oil in seperate bowl. brush all over roast.
- place roast in roasting pan that has been sprayed. make sure roast is fat side up.
- roast for 15 minutes.
- toss veggies with oil, salt and pepper.
- spray cookie sheet and put veggies on it.
- reduce oven heat to 350° and put veggies in.
- roast meat 50-60 minutes and veggies the same time, mixing every 15 minutes.
- place roast on cutting board and let rest 20 minutes.
- heat pan over medium heat, add broth and wine. simmer and reduce heat to low. add butter, salt and pepper.
- if veggies are done, take them out.
- cut roast, serve with veggies and gravy.
However, we have never made a sirloin tip. This is not a pot roast.there is a difference in the cut. Pot roast is usually cheaper meat (still awesome in the IP).
