Remove the pork chops from the brine and pat dry with a paper towel. Season each side of the pork chops with the same rub you used in the brine, and then place the pork chops in your smoker.

- trim the chops of any excess fat
- place them into a shallow pan
- combine the remaining ingredients together and pour the marinade over the chops
- marinade for 2 hours covered in refrigerated
- drain, reserve marinade
- broil the chops over low heat for 6 minutes per side, basting frequently with the marinade

My preference of smoking wood leans toward fruit woods, like apple or pear, or hickory.
