Simmered in a savory dashi based sauce, Nishime is a classic one-pot vegetable stew to serve in Osechi for the Japanese New Year celebration. - Scrape gobo & cut into 1/4" thick diagonal 1inch slices. Soak in water.
- Peel & cut carrots in bite sized pieces.
- Massage konnyaku with salt. Slice & make 1/2" slits. Flip one end thru slit to make twists.
- Cut aburage in bite sizes pieces.
- Fry chicken (or pork belly) in oil until light brown.
- Add water, konbu, shiitake, aburage & konnyaku. Cover & cook for 15 minutes.
- Add shoyu, sugar, dashi-no-moto, takenoko, carrots & gobo and cook for 15 minutes.
- Add araimo and cook for 15 minutes.
