- Wash tripe very well, and boil for 5 mins drain and wash again..
- After washing pour into a pot add water, salt, bay leaf and boil again.
- Grate garlic with scotch bonnet and set aside.
- Mean while chopped onion, tomatoes, red bell pepper and keep
- When the tripe is almost tender remove from heat and drain.
- Place a pot on medium heat, add oil add the chopped vegetable and cook for 2 min, add grated garlic mixture and cook for another minutes.
- Add tripe, garam masala, and curry.
- Add in the stock, add seasoning cubes /salt to taste
- Cover and cook till water reduce to about 1/2.
- Reduce heat and cook when tender remove and allow to cool a little then serve
