Essentially, upma is a thick, porridge-like breakfast dish that is made from coarse rice flour or semolina that has been dry-roasted. Its extremely versatile, so don't be afraid to experiment with ingredients. Semolina is the coarse, purified wheat middlings of durum wheat mainly used in making upma, pasta, and couscous.

The ingredients needed to make Semolina Upma:
  1. Take 1 cup semolina or suji
  2. Prepare 4 cups boiled water
  3. Take 2 onions finely chopped
  4. Get 2-3 green chillies chopped
  5. Prepare 1 inch Grated Ginger
  6. Prepare 2 tbsp green peas
  7. Make ready 5-6 Curry leaves
  8. Make ready leaves As required Chopped coriander
  9. Take 1 tsp mustard seeds
  10. Get 1 tsp urad dal
  11. Take 1 tbsp oil
  12. Take As per taste salt
  13. Make ready 1 tsp ghee
  14. Take 1 tsp lemon juice
  15. Make ready As required Barik sev for garnishing

Upma varies depending on our choice of adding different types of veggies. Wheat Semolina Upma: -Wheat semolina is another healthier option when compared to white semolina. Upma prepared using wheat semolina is very tasty. Add mustard seeds, channa dal, urad dal and onion.

Instructions to make Semolina Upma:
  1. Firstly dry roast semolina on low flame till it's slightly pinkish in colour and becomes aromatic.
  2. Now, boil 4 cups of water.
  3. Meanwhile, heat oil in a kadhai and add Mustard seeds, let it splutter, now add urad dal, then add, Curry leaves, Chopped green chillies, grated ginger and chopped onions. Saute well.
  4. Now add green peas. Cover and cook till peas are soft and tender. Now add roasted semolina and salt. Mix well.
  5. Now to this add boiling water and keep stirring to avoid formation of any lumps. Mix well cover and cook for another 2 mins.
  6. Now, finally add chopped coriander leaves, ghee and lemon juice. Switch off the flame
  7. Serve hot and tasty upma by garnishing it with barik sev with ginger tea

Add semolina and saute until light brown. Add remaining ingredients, except coconut, and mix well. This upma needs a slightly grainy variety of rawa to be used. Not the Bombay Sooji variety which is extremely fine and used for coating.
