Sabudana (Sago / Jevvarsi) vada is a famous Vrat Dish in Maharashtra and other Northern parts of India especially for Durga Pooja (Navratri). My grandmother used to make sabudana vadai using. Sabudana vada, also called 'sabu vada', is a traditional deep fried snack from Maharashtra, India. It is often served with spicy green chutney and along with hot chai and is best eaten fresh.
Steps to make Sago (sabudana) vada:
- Bring boiled potatoes peel them off. Mash them and keep aside.
- Now bring soaked sabudana. Keep aside.
- Bring roasted peanuts, clean cover of peanuts. Then blend them 2-3 times. Mix all ingredients potatoes, blend peanuts, soaked sabudana, salt, red chilli, green chillies, Coriander leaves in one bowl. Mix properly.
- Now make medium size round shape like image. Bring oil in a pan on the stove. When oil starts heated up add round shape stuff in it. Fry them deep. After frying keep it on tissue paper so that extra oil will remove. Make all Vada like this. Now Vada is ready to be served. Serve with red and green sauce.
