This recipe was first mentioned in August last year. This is my own version of a richly flavoured chicken liver pâté. Add onion, mushrooms, bacon, garlic, thyme, bay leaf and rosemary. When chicken livers are tender and no longer pink, remove bay leaf, and process liver mixture in a food processor until smooth.

Steps to make Bison Liver and Mushroom Pâté:
  1. Cut liver into bite-sized pieces. Finely chop the onion and the mushrooms.
  2. Saute the onion and mushrooms in olive oil until onions are translucent and mushrooms are soft.
  3. Add the liver and salt and continue to cook until it has turned color on all sides.
  4. Add the wine, cover the pan with lid and steam for 7-8 minutes.
  5. Put the contents of the pan into a food processor and process into a paste. Alternatively, you could mash it up as finely as possible with a fork, mortar & pestle, etc.
  6. Put paste in a bowl and mix in the sour cream, and adjust taste with salt and pepper.
  7. Put in jars to save and store in the fridge. Serve with bread or good crackers :)

This rich and creamy pâté pairs well with tea on a cold afternoon. Remove bacon from pan, reserving grease. Add onion, livers, and mushrooms to reserved bacon grease. Add mushrooms and pulse until finely chopped, scraping down bowl frequently, then stir in salt, pepper, and spices (this makes a duxelles).
