- beat eggs, put in shallow dish, put cornmeal in shallow dish
- dredge chicken in egg then cornmeal
- add oil to medium skillet, heat medium high.
- cook chicken until golden brown and meat thermometer reads 160
- place chicken on serving dish, pour sauce over the top. use remaining cilantro and pepitas to garnish
