  1. Make ready 500 g Charlotte potatoes (I don't even peal them!)
  2. Take 125 g smoked bacon cubes
  3. Make ready 1 small shallot
  4. Make ready 2 small spring onions
  5. Prepare 1 garlic clove
  6. Make ready Splash white wine
  7. Take Splash single cream
  8. Prepare Pinch salt & black pepper

Instructions to make French Tartiflette:
  1. Preheat the oven 200C. Boil a kettle, transfer the water into a big pan, add salt and the potatoes, and cook for 5 minutes until tender, but not fully soft. Drain and set aside to cool down.
  2. In a frying pan, fry the grated garlic, the shallot and the spring onions previously chopped, and the bacon. Add the wine and cook until it evaporates.
  3. Slice the potatoes in thin slices. Grease an ovenproof dish with butter, then add a layer of potatoes and a pinch of salt (not too much as the bacon will be rich!). Scatter a bit of the onions and bacon mixture, then make another layer with the slices of Rebochlon cheese and add a splash of cream.
  4. Repeat the layers until all the ingredients are gone.
  5. Baked in the oven for 10 / 15 minutes until golden and bubbling.
