Cut a circle from the puff pastry sheet the same size as the pie dish and top with. These are little chicken pot pies. Turn down to a simmer and add the tarragon, mustard, lemon juice, salt and pepper. Add the chicken and the cooked leeks and mushrooms and carefully stir together.
